Homemade Avocado Gnocchi with Sausage in Pesto
I’ve been craving gnocchi’s like no one’s business, and luckily we had potatoes! I was wondering what to do with the avocados we bought and I thought, “hey! what about avocado gnocchi’s!?” So I instantly went to Pinterest (I’ve been so obsessed with this site lately) to see if there was a recipe to make them. Unfortunately, I couldn’t find a recipe I liked, so I decided to just wing it and make my own!
All you need are 3 main ingredients:
- Potatoes
- Avocado
- Chickpea flour
I used chickpea flour so the gnocchi’s were gluten-free! Yep, that’s right! These babies are both gluten-free AND vegan as well! (I am not a vegan, but it’s still a good recipe for those who are, and this dish isn’t vegan hence the sausages lol)

Here is the my simple homemade recipe:
(All measures are approximate, as I didn’t really measure anything.)
- 3 c mashed potatoes
- 3 medium avocados
- 5 c Chickpea flour
- Salt, pepper, and any other spices you want - to taste
First, mash the potatoes and avocados together until mostly smooth.
Then, add the flour. and knead the dough until it’s all mixed in evenly and not sticky. Next time I think I would add a little bit of sugar because I found the gnocchi a little bit bitter, and the sugar cuts that.
Next, roll out the dough in long thin lines. Make sure to sprinkle flour on the table so the dough doesn’t stick.
Cut the rolls into 1/2” - 1” thick .pieces. Place on cookie sheet lined with wax paper and either use right away or freeze. Then transfer the gnocchi’s to freezer bags an hour or two later.

To cook the gnocchi’s; boil water and add to water and stir. Then boil for about 5 minutes, when they float they are done. I like to cook mine about 3 - 5 minutes after they float just to ensure they are cooked and not doughy. When cooked, take gnocchi’s out of water with slotted spoon, I take a container, spread butter on the bottom it and put gnocchi’s on top of it then butter them.
I sauteed fresh mushrooms and onions and added sausage to the pan with spinach and then added pesto over the gnocchi’s, then added the gnocchi’s to the sausage.
It was so delicious! My husband (it was his first time having gnocchi’s) and sister loved it! It’s a simple easy recipe the takes about an hour from start to finish.

The best part about dinner last night was the homemade lemon meringue pie my husband whipped up! Yum!!
